The amount of time and energy required to deliver 1 kg of apples vs 1 kg of bread could be used as a way to establish relative value. As could their current market price - as a starting point.
The core protocol functions of Curation, Valuation, Limitation and Exchange - are to be minded by stewards - (of which we all are). We asses the value of our time compared to what we get out of social media for instance. A single rule for valuation isn't something that I think will help us as humans - but instead flattens the richness of life.
Note that commitments need not only be for discrete services - but can as well be for reputation or certification. For instance you could give someone access to common pooled resources based on their membership, family bonds etc.
Gifts, aid etc. can all be accounted for in this way as well. - There is plenty of room as well for 'fuzzy' services.
Also note that of course not everything needs to be measured. It's up to whomever is curating value to decide what value means to them.
The overlap of all these curations are where values are shared - this is where we get symbiosis, commons .... life.
